All workshops are 3 days based on evening arrival prior to start.
Two full days are dedicated to cooking, starting after breakfast and winding up before dinner, usually around 18.00 or 19.00 when we begin to pull everything together for a candlelit dinner of the day’s work followed by chat and chuckles at the days shared memories, in the garden on balmy evenings or around the log fire on cooler ones.
One last task before the Chianti goes to our heads is to knead the dough for what we call our ‘heritage bread’ – so nicknamed because we have been using and renewing a natural yeast for the past 20 years which already counted 100 years when trusted to us. While we sleep it will be rising to bake for morning breakfast.
The middle day of each workshop is dedicated to special visits, some of which are only possible as – let’s say - privileges of our many years co-operation with Tuscan growers, producers and food lovers. They all the follow the seasons and their fabulous variety of produce – wines, saffron, truffles, cheeses, wild boar, extra-virgin olive oil.


CONTENT
Each 3 day workshop consists of: 2 full cooking days and 1 day of Tuscan country food experiences.

Included: 4 nights accommodation and breakfast at Il Mulino di Ferraia; welcome dinner on evening of arrival; food and wine sampling at Il Mulino while we cook; candlelit feasting with wine, of each day’s preparations; all visits; tastings and tasting lunches; transport on visit days (only); printed recipes and certificate of attendance.

The location of Il Mulino in the heart of the Tuscan countryside, bordering Chianti and near Florence, means it is ideal for exploring Tuscany. Our Tuscan cooking classes are usually held during the week as we have found from experience, that many of our participants like to continue on their holiday in Tuscany at the weekend. Sometimes family members stay too, or join us in the evenings to enjoy the feasting of our day's cooking. Being a very personalized service, we are flexible to requirements.
